Motichoor Laddoo is a popular Indian sweet made from tiny gram flour (besan) droplets, which are then fried and shaped into small balls, and then finally soaked in sugar syrup. Here is a recipe to make delicious Motichoor Laddoo at home:

Ingredients:

2 cups gram flour (besan)

1/2 cup ghee

1/2 tsp green cardamom powder

2 cups sugar

1 and 1/2 cups water

Saffron strands

1/2 tsp rose water

Oil or ghee for frying

Instructions:

Take a large mixing bowl and add 2 cups of gram flour (besan) and 1/2 cup of ghee. Mix it well until the mixture turns into a crumbly texture.

Now, add water little by little and mix it to form a smooth batter. The batter should not be too thick or too thin.

In a large frying pan, heat oil or ghee over medium heat. When the oil is hot, pour the batter through a sieve or a perforated spoon, so that tiny droplets fall into the oil.

Fry the droplets until they are golden brown and crispy. Take them out of the oil and drain them on a paper towel to remove excess oil.

Repeat the process until all the batter is used up.

In a separate saucepan, add 2 cups of sugar and 1 and 1/2 cups of water. Heat it over medium heat and keep stirring until the sugar dissolves.

Add a few strands of saffron and 1/2 tsp of rose water to the sugar syrup and stir well.

Cook the sugar syrup until it reaches one-string consistency. To check if the sugar syrup has reached the right consistency, take a small amount of syrup on a spoon and let it cool for a few seconds. Now, touch it with your index finger and thumb and try to stretch it. If it forms a single string, then the sugar syrup is ready.

Turn off the heat and add the fried gram flour droplets to the sugar syrup. Mix them well and let them soak in the syrup for 10-15 minutes.

Once the droplets are soaked, take small amounts of the mixture and shape them into small balls (laddoos) using your palms.

Garnish with chopped nuts (optional) and serve.
