Spicy Corn Fritters
Ingredients:
- 1 cup corn kernels (fresh or frozen)
- 1/2 cup all-purpose flour
- 1/4 cup cornmeal
- 1/4 cup finely chopped onion
- 2 green chilies, finely chopped
- 1/4 cup chopped cilantro (coriander leaves)
- 1/2 teaspoon cumin powder
- 1/2 teaspoon red chili powder
- 1/2 teaspoon turmeric powder
- Salt to taste
- Vegetable oil for frying
Instructions:
- In a large mixing bowl, combine the corn kernels, all-purpose flour, cornmeal, chopped onion, green chilies, cilantro, cumin powder, red chili powder, turmeric powder, and salt. Mix well to form a thick batter. If the batter is too dry, you can add a little water to adjust the consistency.
- Heat vegetable oil in a deep frying pan or a deep fryer.
- Take small portions of the batter and drop them gently into the hot oil. You can shape them into small patties or fritters if you prefer.
- Fry the fritters until they turn golden brown and crispy. Flip them occasionally for even cooking.
- Once done, remove the fritters from the oil and place them on a paper towel-lined plate to absorb any excess oil.
- Serve the spicy corn fritters hot with your favorite dipping sauce or chutney.
