Spicy Corn Fritters

Ingredients:

  • 1 cup corn kernels (fresh or frozen)
  • 1/2 cup all-purpose flour
  • 1/4 cup cornmeal
  • 1/4 cup finely chopped onion
  • 2 green chilies, finely chopped
  • 1/4 cup chopped cilantro (coriander leaves)
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon turmeric powder
  • Salt to taste
  • Vegetable oil for frying

Instructions:

  1. In a large mixing bowl, combine the corn kernels, all-purpose flour, cornmeal, chopped onion, green chilies, cilantro, cumin powder, red chili powder, turmeric powder, and salt. Mix well to form a thick batter. If the batter is too dry, you can add a little water to adjust the consistency.
  2. Heat vegetable oil in a deep frying pan or a deep fryer.
  3. Take small portions of the batter and drop them gently into the hot oil. You can shape them into small patties or fritters if you prefer.
  4. Fry the fritters until they turn golden brown and crispy. Flip them occasionally for even cooking.
  5. Once done, remove the fritters from the oil and place them on a paper towel-lined plate to absorb any excess oil.
  6. Serve the spicy corn fritters hot with your favorite dipping sauce or chutney.
