Here's a recipe to make Misal Pav at home:
Ingredients:
- 1 cup sprouted moth beans (matki)
- 1 onion, finely chopped
- 2 tomatoes, finely chopped
- 2 green chillies, finely chopped
- 1/2 inch ginger, grated
- 2-3 garlic cloves, grated
- 1 tsp cumin seeds
- 1 tsp mustard seeds
- 1 tsp turmeric powder
- 1 tsp red chilli powder
- 1 tsp coriander powder
- 1 tsp cumin powder
- Salt to taste
- 1 tbsp oil
- 3-4 cups water
- 4-6 pav (bread rolls)
- Farsan (crunchy snack mix)
- Chopped onions, coriander leaves, and lemon wedges for serving
Instructions:

Heat oil in a pressure cooker and add cumin seeds and mustard seeds. Once they splutter, add grated ginger and garlic and sauté for a minute.

Add finely chopped onions and green chillies and sauté until the onions turn translucent.

Add chopped tomatoes and cook until they turn soft and mushy.

Add turmeric powder, red chilli powder, coriander powder, cumin powder, and salt to taste. Mix well and cook for 1-2 minutes.

Add the sprouted moth beans (matki) and water. Mix well and pressure cook for 3-4 whistles or until the beans are cooked.

Once the pressure cooker cools down, open the lid and check the consistency of the curry. If it is too thick, add more water and adjust the seasoning.

To serve, take a bowl of misal curry and top it with some farsan, chopped onions, coriander leaves, and a squeeze of lemon juice. Serve hot with pav (bread rolls).
