Here's a tasty Malai Broccoli recipe for you:

Ingredients:

1 large broccoli head, cut into florets 1 cup heavy cream 1/4 cup yogurt (Greek yogurt works well) 1 tablespoon ghee or butter 1 teaspoon ginger paste 1 teaspoon garlic paste 1/2 teaspoon ground turmeric 1/2 teaspoon ground cumin 1/2 teaspoon ground coriander 1/4 teaspoon red chili powder (adjust to taste) 1/4 teaspoon garam masala Salt, to taste Chopped fresh cilantro, for garnish

Instructions:

  1. Blanch the Broccoli:

    • Bring a pot of water to a boil. Add a pinch of salt.
    • Add the broccoli florets to the boiling water and blanch for about 2-3 minutes until they are slightly tender but still vibrant green.
    • Drain the broccoli and immediately plunge it into a bowl of ice water to stop the cooking process. Drain again and set aside.
  2. Prepare the Malai Sauce:

    • In a large pan, heat ghee or butter over medium heat.
    • Add the ginger paste and garlic paste. Sauté for a minute until fragrant.
    • Add the ground turmeric, ground cumin, ground coriander, and red chili powder. Mix well and cook for another minute.
    • Reduce the heat to low and add the heavy cream to the pan. Stir to combine the spices and cream.
    • Add the yogurt and continue to stir, allowing the mixture to simmer gently. Make sure not to let it come to a boil.
  3. Add the Broccoli:

    • Carefully add the blanched broccoli florets to the creamy sauce. Gently coat the broccoli with the sauce.
    • Allow the broccoli to simmer in the sauce for a few minutes, absorbing the flavors.
  4. Season and Serve:

    • Sprinkle garam masala over the broccoli and sauce. Season with salt to taste.
    • Stir well and cook for another minute or so, allowing the flavors to meld.
    • Garnish with chopped fresh cilantro.
  5. Serve:

    • Transfer the Malai Broccoli to a serving dish.
    • Serve hot as a side dish or even as a light vegetarian main course.
    • Enjoy your creamy and flavorful Malai Broccoli!
