Khandvi is a popular Gujarati snack made from gram flour and yoghurt. Here's a recipe to make it at home:
Ingredients:
1 cup gram flour (besan)
1 cup yoghurt (dahi)
2 cups water
1 tsp ginger paste
1 tsp green chilli paste
Salt to taste
1 tsp turmeric powder
1 tsp mustard seeds
1 tsp cumin seeds
2-3 tbsp oil
1 tbsp chopped coriander leaves
Grated coconut and chopped coriander leaves for garnish
Instructions:
In a mixing bowl, whisk together gram flour, yoghurt, water, ginger paste, green chilli paste, salt and turmeric powder until smooth.
Heat a non-stick pan and add the mixture to it. Cook the mixture on low heat and keep stirring continuously for 8-10 minutes, until it thickens and starts to leave the sides of the pan.
Quickly spread the mixture onto the back of a plate with the help of a spatula, making sure it's thin and even. Let it cool down for a few minutes.
Once the mixture is cool, cut it into small rectangular pieces.
Heat oil in a small pan and add mustard seeds and cumin seeds. Let them splutter for a few seconds and then pour the tempering over the cut khandvi pieces.
Garnish with grated coconut and chopped coriander leaves.
Serve the khandvi immediately as a snack or appetizer.
