Ingredients to make Khaman Dhokla
Chana Dal – 1 cup
Gram flour – 1 tbsp
Ginger-green chili paste – 1 tsp
Sugar - 4 tsp
Baking soda - 1/2 tsp
Rai - 1 tsp
Sesame - 1 tsp
Asafoetida - 1 pinch
Curry leaves - 1 tbsp
Green chilies cut lengthwise – 3-4
Green coriander - 2 tbsp
Lemon juice - 1 tsp
oil - as required
salt - as per taste
How to make Khaman Dhokla
To make Khaman Dhokla, first, clean the chana dal and soak it in water for 2 hours. After the fixed time separate the water of the dal and put it in the mixer and grind it coarsely. Now shift the dal paste into a big bowl and then filter one tablespoon of gram flour and mix it in the dal paste. After this add ginger-green chili paste, sugar, salt as per taste, and lemon juice to the paste and mix.
Add baking soda to the batter at the end and after mixing it well, keep it in a warm place for 6-7 hours, so that the batter gets fermented well. After the fixed time, grease a plate with oil with a brush and pour the batter, and spread it in equal proportion. After this, fill half of the water in a big vessel and heat it on the gas. Place a utensil in the middle of it and cover it with a plate of Dhokla batter and steam it for 15 minutes.
After the fixed time, take out the dhokla and cut it into squares with a knife and take it out in a vessel. Now put oil in a small nonstick pan and heat it. After the oil is hot, add mustard seeds, sesame seeds, curry leaves, asafoetida, and green chilies, and fry for 310 seconds. After this, add a little water and spread the tempering on the dhokla and mix it well. Soft and spongy Khaman Dhokla full of taste is ready.
