Junglee Pulav Recipe: There are many variations to the junglee pulao recipe, some insist on using leftover rice and curry and some prefer starting from scratch. But this recipe is very simple.

Ingredients:
- 1/2 kg chicken
- one and a half cups rice
- 1 tbsp ghee 1 small onion chopped
- 1 big tomato chopped
- a handful of coriander leaves chopped
- 1/2 cup cauliflower florets
- 1/2 cup beans/green peas
- 1/2 cup potato cubed
- 1 tbsp ginger-garlic paste
- 1 tsp cumin powder
- 1 tsp red chili powder
- 1 tsp turmeric powder
- 2 bay leaves
- 1 cinnamon stick
- 2-3 green cardamom
- 4 cloves
- 1-star aniseed
- Salt as per taste
Method :
1. In a small bowl, combine the cumin powder, red chili powder, and turmeric powder with a little water to make a semi-liquid slurry.
2. Wash and soak the rice till the next step. Heat some oil in a pan and add all the spices. Let it splutter and then add chopped onions and fry till light golden brown.
3. Add ginger-garlic paste and cook till the raw smell goes away. Add tomatoes and mix till mushy.
4. Put the spice solution in it and cook for some time. Now add chicken and some water to it and let it cook till the chicken is almost cooked.
5. Now add rice, and vegetables and mix everything well.
6. Add 2-3 cups of water or enough water to cook the rice. Let it cook on low flame for about 20-30 minutes till the water dries up and the rice is cooked.
7. Take it off the flame and keep it for some time. Sprinkle ghee and coriander leaves with a spoon just before serving. Enjoy hot.
