Ingredients:
2 cups grated gourd (such as bottle gourd or zucchini)
1 cup boiled and mashed potatoes
1/2 cup besan (gram flour)
2 tablespoons rice flour
1 small onion, finely chopped
2-3 green chilies, finely chopped (adjust according to your spice preference)
1 teaspoon ginger paste
1 teaspoon garlic paste
1/2 teaspoon cumin powder
1/2 teaspoon coriander powder
1/2 teaspoon garam masala
Salt to taste
Oil for deep frying
Instructions:
Take the grated gourd in a clean muslin cloth or kitchen towel. Squeeze out the excess water from the grated gourd. Ensure that the gourd is dry to prevent the balls from becoming soggy.
In a mixing bowl, combine the squeezed grated gourd, mashed potatoes, besan, rice flour, chopped onion, green chilies, ginger paste, garlic paste, cumin powder, coriander powder, garam masala, and salt. Mix everything well to form a dough-like consistency.
Heat oil in a deep pan or kadai for frying.
Take a small portion of the mixture and shape it into small balls or patties. Repeat this process with the remaining mixture.
Carefully drop the gourd balls into the hot oil, a few at a time. Fry them until they turn golden brown and crispy. Make sure to fry them on medium heat to ensure they are cooked evenly.
Once the gourd balls are fried, remove them using a slotted spoon and place them on a paper towel-lined plate to absorb any excess oil.
Serve the gourd balls hot as a party starter or appetizer. They can be enjoyed on their own or with a dip or chutney of your choice.
