Often in the evening, when I feel hungry, I feel like eating something light and healthy. Sooji's Khandvi will prove to be a great option to calm this evening's hunger. It is very easy to make.
Ingredients
a cup of semolina
a cup of curd
a cup of water
two teaspoons ginger
two green chilies
1 tablespoon oil for greasing
for tempering
half a teaspoon mustard seeds
2 whole red chilies
a green chili
6-7 curry leaves
two teaspoons oil
Method :
First of all grind curd, ginger, green chilies, semolina and a cup of water in a mixer.
After this, filter this mixture and cover it for 5 minutes and keep it like this.
Now add cumin, chili flakes, salt as per taste and green coriander leaves to this solution.
After this, take a plate and grease it with the help of oil.
Now put two tablespoons of the solution on a plate and spread it well.
After this, put water in a big pot and boil it on the gas.
Now put this plate with batter in the pot of hot water on the gas and cook it in steam for 2 minutes.
After two minutes, remove the plate from the steam and when it cools down, cut it lengthwise with the help of a knife and roll it.
After this, put oil in a pan and heat it and then add mustard seeds, whole red chilies, green chilies, and curry leaves and fry it well.
Now put the rolled khandvi in the pan and fry it for some time.
Hot semolina khandvi is ready. Serve it with sauce or chutney.
