Ingredients:
1 cup dried red lentils, rinsed and drained 1 onion, chopped 3 cloves garlic, minced 1 carrot, peeled and diced 1 celery stalk, diced 1 tablespoon fresh ginger, grated 1 teaspoon ground turmeric 1 teaspoon ground cumin 1/2 teaspoon ground coriander 1/4 teaspoon ground cinnamon 1/4 teaspoon cayenne pepper (adjust to taste) 6 cups vegetable or chicken broth 1 can (14 oz) diced tomatoes 1 cup spinach or kale, chopped Juice of 1 lemon Salt and pepper, to taste 2 tablespoons olive oil Optional toppings: chopped fresh cilantro, Greek yogurt, chopped nuts
Instructions:
In a large pot, heat the olive oil over medium heat. Add the chopped onion, garlic, carrot, and celery. Sauté for about 5 minutes, or until the vegetables start to soften.
Add the grated ginger, ground turmeric, ground cumin, ground coriander, ground cinnamon, and cayenne pepper to the pot. Cook for another 2 minutes, stirring frequently, to allow the spices to bloom and release their flavors.
Add the rinsed lentils to the pot and stir to coat them with the spice mixture.
Pour in the vegetable or chicken broth and add the diced tomatoes (including their juices). Stir everything together.
