Kadhai Mushroom

  • Take a non-stick pan and place it on medium flame. Add whole red chilli, coriander seeds, black pepper, cloves, green cardamom, fenugreek seeds, cinnamon, mace and cumin seeds in the pan and dry roast. After this grind them finely. In a separate pan, fry the mushrooms while stirring for a while.
  • In a bowl , chop onion, tomato, capsicum , green chilli, ginger and green coriander. Now put oil in a pan and heat it on medium flame. Add bay leaves along with onion and fry for some time.
  • After this, add ginger and garlic paste to it and let it cook for 2 to 3 minutes. Add chopped tomatoes, green chillies, ground spices, turmeric and mix well.
  • Add chopped capsicum to it and fry for 2 minutes. Now add salt and garam masala powder as per your taste. Mix well and then add water. Let it cook for some time and then add fried mushrooms to it.
  • Cover the pan with a lid and let it cook for 5 minutes. Garnish the Kadhai Mushroom with dry fenugreek leaves and chopped coriander leaves and the Kadhai Mushroom is ready.

Mushroom Kebab

  • Wash the mushrooms and keep them aside. Chop tomato, onion and capsicum. Place a frying pan on medium flame and add cumin powder to it and fry it without oil.
  • Put black pepper in the grinder and grind it well to make a fine powder. Like cumin powder, fry the powder without oil in the same pan.
  • After this, add mushrooms and capsicum alternately on the skewers. Now place the skewers on a medium flame grill and reduce the flame for 10-15 minutes.
  • Fry the kebabs continuously with butter and turn off the grill. Take out the kebabs in a plate and add salt, roasted black pepper and cumin powder to it. Garnish with onion pieces and serve!
