Ingredients for Shahi Shikanji
Curd - 1 cup
Almonds - 10 to 12 soaked
Cashews - 10 to 12 soaked
Raisins - 1 tbsp soaked
Milk - 1 litre
Saffron threads - 15 to 20
Sugar - 4 tbsp
Cardamom - 4 coarsely ground
Shahi Shikanji Recipe
Put a cup of curd in a cotton cloth and hang it, this will remove all the water from it.
Soak 10 to 12 cashew nuts, almonds and pistachios in hot water.
Soak 1 tbsp raisins in water as well.
Soak the pan in some water and wash it. Add 1 litre of full cream milk in it.
Cook it on high flame till it starts boiling.
Let it thicken on a medium-high flame while stirring continuously.
Soak 15 to 20 saffron threads in a bowl after taking out some milk from the pan.
When the milk becomes thick add saffron milk to it and mix.
After cooking a little, when the milk remains almost half, turn off the flame and let it cool.
After about 15 minutes the milk cools down, then take out the curd in a separate bowl.
Take out cashews, almonds and raisins from the water and keep them.
Now put cashew almond curd and 4 tbsp sugar in a juicer or mixer jar and grind it very finely.
After grinding add the remaining milk and four cardamoms and grind them again.
Now mix all the mixture. Add soaked raisins to it.
Your Shahi Shikanji is ready, chill it by keeping it in the fridge and enjoy the royal taste.
