Gond Paak is a traditional Indian dessert made with edible gum (gond), nuts, and sugar. It is known for its rich, nutty flavour and is often served during the winter months. Here is a recipe to make Gond Paak at home:

Ingredients:

1/2 cup gond (edible gum)

1/2 cup almonds, chopped

1/2 cup cashews, chopped

1/2 cup raisins

1 cup ghee

1 cup grated jaggery (or brown sugar)

1 cup whole wheat flour

1/2 cup milk

1/2 tsp green cardamom powder

Instructions:

In a heavy-bottomed pan, dry roast the Gond (edible gum) until it puffs up and becomes crispy. Take it out of the pan and crush it into small pieces using a mortar and pestle.

In the same pan, heat 1 cup of ghee over medium heat. Add the chopped almonds, cashews, and raisins to the pan and sauté for a few minutes until the nuts turn golden brown. Take them out of the pan and keep them aside.

In the same pan, add 1 cup of whole wheat flour and roast it on low heat until it turns light brown and gives off a nutty aroma.

Add the crushed gond and mix well. Continue roasting the mixture for another 5-6 minutes until the gond turns light brown and crisp.

Add 1 cup of grated jaggery (or brown sugar) to the pan and stir well until it melts and combines with the flour mixture.

Add 1/2 cup of milk to the pan and keep stirring continuously until the mixture thickens and starts leaving the sides of the pan.

Add 1/2 tsp of green cardamom powder and mix well.

Add the roasted nuts and raisins to the pan and mix well.

Take the pan off the heat and pour the mixture into a greased tray.

Allow it to cool for a few minutes, and then cut it into small squares or diamonds.

Your delicious Gond Paak is now ready to be served!
