Material
Potato - 1/2 kg
Cumin - 1 tbsp
Black pepper - 1 tsp
Garam masala - 1 tsp
Dry mango - 1 tbsp
Dry red chili - 1-2
Whole coriander - 2 tbsp
Asafoetida - 1 tbsp
Chaat masala - 1 tbsp
oil as required
salt to taste
Onion - 2-3
Green chili - 2
Green coriander - 1 cup

Method
1. First you boil the potatoes.

2. After this mash the boiled potatoes.

3. Be careful not to over-mash the potatoes.

4. Now finely chop green chilies and green coriander.

5. After this cut the onion in a round shape.

6. Heat oil in a pan. Add whole coriander, dry red chili, and black pepper, and cook on low flame.

7. Turn off the gas when the smell of spices comes. Then let the spice cool down.

8. After the masala cools down, grind it in a mixie.

9. Put the ground spices in the mashed potatoes.

10. After this add dry mango powder, chaat masala, and salt to this spice.

11. Add chopped green chilies and green coriander to the mixture and mix.

12. Heat the oil again in a pan and cook on medium heat.

13. As soon as the oil becomes hot, add cumin and asafetida to it and fry for some time.

14. Add onion after roasting asafoetida and cumin. Fry the onions till golden.

15. When the color of the onions turns golden, add the potato mixture to it.

16. Cook the mixture well into the ingredients. Garnish it with coriander after it is cooked well.

17. Garnish with coriander and serve potato stuffing with paratha or roti.
