Material :
1 cup cooked rice
1 cup curd
½ cup grated cucumber
8-10 curry leaves
3-4 green chilies
chopped coriander leaves
2-3 tbsp pomegranate seeds
2 tbsp peanuts
1 tsp chili powder
1 tsp cumin
1/2 tsp asafoetida
1-2 tsp ghee
salt to taste

Method :
To make Cucumber Curd Rice, first, grate the cucumber and keep it aside.

Now beat the curd well in a bowl and add grated cheese to it and mix.

After this, add salt, black pepper, and green coriander to it and mix it well.
Now put the cooked rice in this puree of cucumber and curd.

Put ghee in a pan to heat and then add cumin, asafoetida, chili, curry leaves, and peanuts and fry for 1 minute.

Now pour this prepared tempering over the prepared cucumber curd rice and mix it well.

You can keep it in the fridge. Serve it cold after 10-15 minutes.
