Ingredients for making ginger chutney-

100 gm ginger

2 tbsp garlic

1 tbsp gram dal 1 tbsp urad dal 1/4 tsp

fenugreek seeds 1 tsp cumin 50 gm tamarind 100 gm jaggery 25-30 dry red chilies 1 tbsp coriander seeds 2-3 tbsp oil Salt to taste ½ cup Water for tempering 1/2 tsp chana dal 1/2 tsp urad dal 1 tsp mustard seeds 1 pinch asafoetida 1 tbsp curry leaves chopped 2-3 dry red chilies 2 tbsp oil

How to make Ginger Chutney?

To make ginger chutney, first of all, wash and clean the ginger.

Then cut it into small pieces and keep it separately.

After this, put 2-3 spoons of oil in a pan and heat it.

Then put ginger pieces in it and fry for about 2 minutes.

After this, add chopped garlic and fry it and take it out in a bowl.

Then put some more oil in the pan and heat it.

After this, add chana dal, urad dal, coriander seeds, cumin, and fenugreek seeds.

Then fry all these things well till the aroma comes.

After that add dry red chillies and fry them on low flame.

Then turn off the gas and put all the ingredients in a mixer jar and grind them like spices.

After this, add roasted ginger and garlic to it.

Then grind all the ingredients once more and make a thick paste.

After this, put tamarind soaked in water in the mixer.

Then make a smooth paste by adding jaggery and salt as per taste.

After this, add water as required in the chutney and mix.

Then take out the prepared mixture in a bowl and keep it separately.

After this, put 2 tablespoons of oil in a pan and heat it.

Then add mustard seeds, chana dal, urad dal, and 2-3 dry red chilies.

Along with this, add curry leaves and a pinch of asafoetida and fry it.

Then put the tempering in the bowl of chutney and spread it well.

Now your taste and nutrition-rich ginger chutney are ready.
