Here's a quick and easy recipe for a Masala Cheese Sprout Sandwich that you can enjoy for breakfast:

Ingredients:

4 slices of bread (whole wheat or multigrain)

1 cup sprouts (such as mung bean sprouts or mixed sprouts)

1 medium-sized onion, finely chopped

1 medium-sized tomato, thinly sliced

1 small green bell pepper (capsicum), thinly sliced

1 green chili, finely chopped (optional, adjust according to your taste)

1/2 teaspoon chaat masala (Indian spice mix)

1/4 teaspoon cumin powder

Salt to taste

4-6 cheese slices (you can use any cheese of your choice)

Butter or ghee (clarified butter) for toasting

Instructions:

In a mixing bowl, combine the sprouts, chopped onion, sliced bell pepper, green chili (if using), chaat masala, cumin powder, and salt. Mix well to combine all the flavors.

Take a slice of bread and spread a layer of the sprout mixture on it.

Place a few tomato slices on top of the sprout mixture.

Add a cheese slice on the tomato slices.

Cover the sandwich with another slice of bread.

Heat a griddle or a non-stick pan over medium heat. Spread a little butter or ghee on the surface.

Place the sandwich on the heated griddle or pan and cook for a few minutes until the bottom side turns golden brown.

Flip the sandwich carefully using a spatula and cook the other side until it becomes crispy and golden brown.

Remove the sandwich from the pan and cut it diagonally into halves or quarters.

Serve hot with your favorite condiments or chutney.
