Here's an easy method to make Palak Paneer Uttapam for breakfast:

Ingredients:

1 cup dosa batter (fermented rice and lentil batter)

1 cup spinach leaves, blanched and pureed

1/2 cup crumbled paneer (Indian cottage cheese)

1 small onion, finely chopped

1 small tomato, finely chopped

2-3 green chilies, finely chopped (adjust according to your taste)

1/4 teaspoon cumin seeds

Salt to taste

Oil or ghee for cooking

Instructions:

In a mixing bowl, combine the dosa batter and spinach puree. Mix well to form a smooth batter. Add a little water if needed to adjust the consistency.

Heat a tawa or a non-stick skillet over medium heat. Once hot, drizzle a few drops of oil or ghee and spread it evenly on the surface.

Take a ladleful of the batter and pour it onto the center of the tawa. Using the back of the ladle, spread the batter in a circular motion to form a thick uttapam.

Sprinkle a few chopped onions, tomatoes, green chilies, and crumbled paneer evenly over the uttapam. Lightly press them into the batter.

Drizzle a little oil or ghee around the edges of the uttapam and cook it on medium heat until the bottom turns golden brown and crispy.

Flip the uttapam using a spatula and cook the other side for a few minutes until it is cooked through and the paneer is slightly golden.

Remove the Palak Paneer Uttapam from the tawa and repeat the process with the remaining batter and toppings.

Serve the Palak Paneer Uttapam hot with coconut chutney, tomato chutney, or sambar.
