Method

To make Yakhni Pulao, first of all, we will prepare Yakhni. Today is Bakrid, so if you are preparing Yakhni with Mutton, then first of all wash the Mutton thoroughly. Now put the mutton in a large pot and add ginger-garlic paste, whole garam masala, salt, and water so that the mutton is completely immersed.

After this, cover it and cook on medium flame till the mutton becomes soft. It may take about 1-1.5 hours to cook. When the mutton is cooked, strain it and keep the yakhni aside and also keep the mutton aside.

Now it is time to make pulao

After making yakhni, it is time to make pulao. For that, wash the rice thoroughly and soak it in water for 30 minutes, then drain the water. After this, heat ghee or oil in a large pot. Now add onion to the pot and fry it till it becomes golden brown. When the onion is fried, add coriander powder, turmeric powder, and a little green chili to it. Then add curd to it and mix well.

Now add cooked mutton to it and mix well. Finally add soaked rice to it and then mix well. When it is mixed properly, add yakhni to it. The quantity of yakhni should be double that of rice, i.e. add 4 cups of yakhni to 2 cups of rice.
If the yakhni is less, then add water to it to make the quantity correct. Cover it and cook on low flame till the rice is completely cooked and all the yakhni dries up. It may take about 20-25 minutes. When it is completely cooked, add coriander leaves to it and then serve it hot with raita.
