The real preparation begins with soaking the rice.

The first and most important step in making tahari is to thoroughly wash the basmati rice and soak it in water for about 15 minutes. Meanwhile, coarsely chop your favorite vegetables, such as potatoes, carrots, peas, and cauliflower, so that they retain their shape even after cooking and the tahari looks attractive.

The real desi aroma comes from the spices.

Oil is heated in a pressure cooker or heavy-bottomed pot, and whole spices like bay leaves , cinnamon , cloves , and cardamom are added. Onions are then added and sautéed until golden brown. These whole spices give tahari its distinctive deep aroma and flavor, which distinguishes it from ordinary pulao.

After the onions turn golden, all the chopped vegetables are added, along with dry spices like turmeric, red chili, and coriander powder . This mixture is stir-fried for about 5 minutes , stirring constantly to remove all the rawness of the spices and soften the vegetables slightly .

After roasting the rice, add water as needed and season with salt to taste. Close the lid of the pressure cooker and cook over medium heat for 2-3 whistles. After the whistles, let the pressure release automatically. This prevents overcooking of the rice and improves the texture of the tahari.

Coriander leaves and lemon provide the perfect finishing touch.

Once the tahari is ready, sprinkle finely chopped coriander leaves on top and, if desired, squeeze in lemon juice. This enhances the flavor. Serve it hot with raita or papad; rest assured, guests will be raving about it .
