Make a confectioner-like milk cake at home with two easy methods
Milk Cake Recipe: The sight of a grainy, light brown milk cake at a sweet shop is bound to tempt you. Most people avoid making it at home because they think it's a complicated process. The truth is, with the right technique and a little patience, this same confectionery-like taste and texture can be easily created in your own kitchen.
After all, how is the famous grainy texture created?
Milk cake is characterized by its grainy texture, which is achieved through the proper technique of curdling the milk. Two methods are used for this: some artisans use a very small amount of alum, while others achieve the same effect with lemon juice. The objective in both methods is the same: to lightly curdle the milk and create fine grains.
Learn this traditional method
First, fresh milk is brought to a boil, stirring constantly to prevent it from sticking to the bottom. Once the milk has fully boiled, a very small amount of alum is added—just a pinch per 5 liters of milk. Upon adding the alum, the milk curdles and becomes grainy. The mixture is then cooked over low heat until it thickens and becomes like khoya.

If alum is to be avoided, lemon juice is an equally effective alternative. Milk is cooked in a heavy-bottomed pot, stirring constantly, until reduced by half. Lemon juice is then added drop by drop, causing the milk to form light lumps. Be careful not to add too much lemon juice or too quickly, as this can ruin both the texture and taste.
This last step gives the authentic market taste.
After the granules are formed, the next step is the same in both methods. Once the milk has thickened completely, sugar is added to taste. Generally, 2.5 to 3 kg of sugar is considered appropriate for 5 kg of khoya. After this, the mixture is lightly toasted, and then desi ghee and cardamom powder are added. If desired, you can also garnish it with chopped almonds, pistachios, and saffron.
If you hurry, the entire milk cake will get spoiled.
The prepared mixture is spread evenly on a greased tray or mold and allowed to cool to room temperature. It is then allowed to set for at least 4 to 5 hours or overnight. Cutting hastily can result in crumbling pieces, so cut into desired shapes with a knife only after it has completely cooled and set. This way, you'll have a granular, soft, and delicious milk cake, just like the one at a confectionery shop, ready at home.
