To make golgappas at home, first, combine wheat flour, semolina, a little salt, and a teaspoon of oil in a large bowl. Mix well with your hands until everything is evenly combined, then gradually add water and knead into a stiff dough.

Now form small balls from the kneaded dough. Cover them with a damp cloth and let them rest for 5 minutes. This will allow the dough to set slightly and make it easier to roll.

Then, roll each dough ball into small puris. Heat oil in a pan and fry the puris over medium heat until they puff up and turn golden brown. Drain the fried golgappas on tissue paper to drain off any excess oil.

Now to make the most special spicy water for Golgappa, grind mint leaves, coriander leaves, a small piece of ginger, green chillies, a little tamarind pulp in a mixer and make a green paste, then mix this paste in 1 litre of cold water in a big vessel.
