Especially during the festive season , if you're craving something sweet at home, bottle gourd halwa is a great option. Its flavor is light, creamy, and aromatic. Fortunately, it doesn't require many ingredients.
To make bottle gourd halwa, you need fresh gourd, milk, sugar, ghee, almonds, and cardamom. If cooked properly, the gourd's flavor is significantly transformed, and the finished halwa is so delicious that even children often don't realize it's made with gourd.
Ingredients for making bottle gourd pudding
This recipe can be prepared for about 4 to 6 people. For this, take a medium-sized bottle gourd. After peeling and grating it, you should have about 2 cups of it. Additionally, you will need 6 tablespoons of ghee, 2 cups of full-fat milk, half a cup of sugar, 10 to 12 almonds, and about three-quarters of a teaspoon of cardamom powder.
First, prepare the gourd
Cut off the top and bottom of the bottle gourd and remove it. Now peel it lightly. Be careful not to peel too much. Then grate it into a medium-thickness grated piece. After grating the bottle gourd, do not leave it open for too long, as this can change its color. It is best to grate the bottle gourd just before making the halwa.
Preheat the milk
Heat the milk thoroughly in a pan and set it aside. Using full-fat milk for making halwa gives it a better taste and texture. Now take a heavy-bottomed pan or wok. Add 4 tablespoons of ghee and heat it. Once the ghee is hot, add the grated bottle gourd. Turn the heat to medium and mix well. Cook for about 4 to 5 minutes. Stir occasionally to prevent the bottle gourd from sticking to the bottom of the pan or burning. When the bottle gourd begins to soften, add the hot milk.
Cook the bottle gourd with milk.
After adding the milk, mix the bottle gourd well and let it cook over medium heat. Stir occasionally. In about 10 minutes, the milk will have evaporated significantly, and the bottle gourd will be thoroughly cooked. When the milk is almost dry, add the sugar.
Don't panic after adding sugar.
Once the sugar is added, the gourd mixture will become thin and slightly watery again. This is completely normal. Keep the flame on medium and cook the mixture, stirring occasionally, rather than continuously. After about 4 to 5 minutes, the mixture will begin to thicken again.
Now add ghee and almonds
When the halwa thickens slightly, heat the remaining 2 tablespoons of ghee in a small pan. Add the chopped almonds and fry for a few seconds. Once the almonds turn light golden, turn off the heat. Be careful not to overcook the almonds, or they may taste bitter. Now add this ghee and almonds to the prepared halwa and mix well. Cook for about a minute, then turn off the heat. Finally, add cardamom powder and mix well. Your delicious bottle gourd halwa is ready.
