Ingredients for making potato fenugreek curry
Chopped fenugreek - 4 cups
Boiled potatoes – 2 cups
Cumin - 1 tsp
Asafoetida - 1 pinch
Garlic chopped - 1 tsp
Ginger chopped - 1 tsp
Green chili chopped - 1
Dry red chili - 2
Turmeric - 1/2 tsp
Coriander powder - 1 tsp
Cumin powder - 1 tsp
oil 3-4 tbsp
salt - as per taste
How to make Potato Fenugreek Vegetable
To make a dry vegetable of potato fenugreek, first, take fenugreek and wash it clean. After this, break the fenugreek leaves and separate the stalks. After this finely chop the leaves. Now boil the potatoes and peel them and cut them into square pieces. After this, finely chop ginger, garlic, and green chilies. Now put chopped fenugreek in a bowl and add some salt to it, toss it well, and keep it aside for 15 minutes.
Now put oil in a pan and heat it on medium flame. When the oil becomes hot, fry cumin and asafoetida in it for a few seconds. After this, add chopped garlic, ginger, green chilies, and red chilies and fry them all for 30 seconds. After this, add turmeric powder and potato pieces and mix well with the help of a ladle cook the potatoes for 3-4 minutes while stirring.
Now add fenugreek leaves, coriander powder, cumin powder, and salt as per taste to the potatoes and mix them all well. After this, cover the vegetable and let it cook for another 45 minutes. During this, keep stirring the vegetable with the help of a ladle. When the fenugreek becomes soft, turn off the gas. Tasty potato fenugreek curry is ready for lunch or dinner. Serve it with roti or paratha.
