Scrambled egg
3 eggs 2 tsp oil 1 tsp garlic 1 tsp ginger 1 green chilli 1/2 cup onion 2 tsp salt 1 tsp turmeric powder 1 tsp chilli powder 1/2 cup tomato green coriander Beat the eggs in a bowl. Leave it aside. Heat oil in a pan and add oil to it. Add garlic, green chillies and ginger. Stir well till it turns golden brown. Add chopped onions and fry lightly. Add salt, turmeric powder, and chilli powder and mix everything well. Add chopped tomatoes and mix all the ingredients. Add eggs to the pan and beat them till well cooked. Avoid raw parts. Garnish with coriander leaves and serve.
Masala Omelet
2 eggs 1 tbsp oil 1 garlic 2 spring onions 1 medium tomato 1/2 medium green chilli 1 tsp curry powder 1/2 tsp garam masala 1 tbsp fresh coriander Heat the oil in a pan. Add crushed garlic, chopped green onions, tomatoes and green chillies. Add curry powder and garam masala. Boil two eggs in a small bowl. Season it with salt. Mix well again and put in the pan. Turn the omelette and cook for 1-2 minutes.
Egg Paratha
2 cups all-purpose flour, a pinch of salt, 1 tablespoon oil, 2 eggs, 1/4 cup onion, 1 green chilli, 2 tablespoon green coriander, and 1/2 teaspoon garam masala, mix flour, salt and oil in a big bowl and knead the dough. In another bowl, beat eggs with onion, chilli, coriander, garam masala and salt. Make 4 parts from the dough. Roll out the dough ball in a circular motion. Heat a griddle and put the rolled dough on it. As soon as the edges start getting crisp, make a slit and pour the egg mixture. Let it cook for one more minute. Flip over and repeat the same on the other side. Sprinkle some oil and wait till it turns golden brown. After this serve hot.
Boiled Egg Chaat
2 boiled eggs 1 tsp tomato ketchup 1 tsp tomato chilli sauce 1 tsp chaat masala 1 tsp lemon juice 1 tsp roasted cumin salt as per taste green coriander 1 green chilli 1 onion 1 green onion Cut the boiled eggs. In a large bowl, add chopped onions, chopped tomatoes, salt, spring onions, chopped green chillies and green coriander and mix well. Add spices and tomato ketchup and chilli sauce. Sprinkle chopped eggs with a pinch of salt. Your healthy boiled egg chaat is ready.
