Ingredients:
- 4 slices of whole wheat bread
- 1/2 cup of grated cheese (cheddar or any other cheese of your choice)
- 1/2 cup of mixed vegetables (sliced bell peppers, onions, tomatoes, mushrooms, etc.)
- 1/4 cup of chopped cilantro (coriander)
- 1 tablespoon of olive oil
- Salt and black pepper to taste
Instructions:

Preheat a grill pan or a sandwich maker.

In a bowl, mix together the grated cheese, mixed vegetables, cilantro, olive oil, salt, and black pepper.
