To make appe, wash rice, lentils, poha, and fenugreek seeds together and soak them in water for about 4-5 hours. After that drain the water and blend the mixture. Later add water according to the requirement and make the mixture a smooth solution. Consistency should be similar to dosa batter.

Take out the batter in a large bowl and add salt. Mix them all well and keep them soaked overnight for about eight to ten hours. Now mix the batter well. Heat the appe pan on low flame and pour a few drops of oil on each mold.
Pour batter into each mold and fill about 3/4 full. If desired, add finely chopped onions, grated carrots, green chilies, ginger, coriander leaves, or any other greens of your choice to each mold. Cover the pan with a lid and let the monkeys cook for a few minutes on medium-high heat.

Using a spoon, gently flip each apple and cook on the other side as well, till it turns golden brown. When cooked from both sides and become crispy, take out the apples from the pan and keep them on a plate. Repeat the process with the remaining batter, greasing the pan before each addition of batter. Serve the eggs hot and crispy with coconut lutenica, tomato lutenica, or any other lutenica of your choice.
