Recipe
-First of all the dough has to be kneaded. Take flour in a big vessel and add melted ghee, carom seeds, and a little salt to it.

Now mix it well and press it in your hand. If the dough starts becoming like laddu, it means that the amount of ghee is correct.

- If it does not happen then add a little more ghee. Now slowly add water and knead the dough. The dough should neither be too hard nor too soft.

Now cover the dough and keep it aside. While the dough is ready, prepare the potatoes for the filling.

- For this, take out all the spices separately. Cut boiled potatoes into small pieces.

Now take all the spices (red chili, coriander, and cumin powder, garam masala) in a bowl, add some water to it, and mix well.

- Now add 1 tsp oil to the pan. When the oil becomes hot, add cumin, ginger-garlic paste and chopped green chilies.

When everything is roasted, add the wet masala to it. Fry it on low flame until the oil starts separating.

When the masala is roasted, add chopped coriander to it. Stir lightly and then add chopped potatoes to it.

Also add chaat masala, salt, cashew nuts, and raisins. Now fry it on low flame for 3 to 4 minutes. Potato stuffing is ready.

Now take the dough and knead it well once again. Take dough equal to one paratha, roll it into a round shape and lightly flour it.

Now roll it slowly into a round shape. Roll it as big as a paratha and then cut it from the middle. Now separate the two take one part and apply water on its edges. Lift both ends and stick them together.

- After pasting it will become a triangle. Similarly, make all the samosas and then fry them in hot oil on a low flame.

There should be enough oil that the samosas are completely immersed in it. Now let them fry slowly.

- It takes only 10 minutes for samosas to be fried once. When the samosas become light brown, take them out.
