Here's a simple recipe for making Aloo Kurkure at home:

Ingredients:

2 large potatoes

1/2 cup besan (gram flour)

2 tablespoons rice flour

1 teaspoon red chili powder

1/2 teaspoon turmeric powder

1/2 teaspoon chaat masala

Salt to taste

Oil for deep frying

Instructions:

Peel the potatoes and cut them into thin, long strips resembling French fries. You can use a knife or a mandoline slicer for this.

Soak the potato strips in cold water for about 10-15 minutes to remove excess starch. Then, drain the water and pat them dry using a clean kitchen towel or paper towels.

In a mixing bowl, combine besan, rice flour, red chili powder, turmeric powder, chaat masala, and salt. Mix well to form a smooth, lump-free batter.

Heat oil in a deep frying pan or kadhai over medium heat.

Dip a few potato strips at a time into the batter, ensuring they are evenly coated.

Carefully drop the coated potato strips into the hot oil. Fry them in small batches to avoid overcrowding the pan.

Fry the potato strips until they turn golden brown and crispy. This usually takes about 5-6 minutes. Keep stirring occasionally to ensure even frying.

Once done, remove the fried potato strips from the oil using a slotted spoon and place them on a paper towel-lined plate to absorb excess oil.

Repeat the frying process with the remaining potato strips.

Allow the Aloo Kurkure to cool down slightly before serving. Sprinkle some extra chaat masala or any other seasoning of your choice for added flavor.
