Santula is a traditional Odia (Oriya) recipe that is made with mixed vegetables, lentils, and spices. It is a healthy and nutritious dish that is low in calories and high in fibre. Here's a simple recipe to make Santula at home:
Ingredients:
- 1 cup mixed vegetables (potatoes, carrots, beans, pumpkin, brinjal, etc.), chopped
- 1/2 cup arhar dal (split pigeon peas)
- 1 onion, finely chopped
- 2-3 garlic cloves, finely chopped
- 1 green chilli, finely chopped
- 1 tsp cumin seeds
- 1 tsp mustard seeds
- 1/2 tsp turmeric powder
- Salt to taste
- 1 tbsp oil
- 2 cups water
- Coriander leaves for garnishing
Instructions:

Wash the arhar dal (split pigeon peas) and soak it in water for 30 minutes.

In a pressure cooker, heat oil and add cumin seeds and mustard seeds. Once they splutter, add finely chopped garlic and green chilli and sauté for a minute.

Add finely chopped onions and sauté until they turn translucent.

Add the mixed vegetables and sauté for a few minutes.

Drain the soaked arhar dal and add it to the pressure cooker. Add turmeric powder, salt to taste, and 2 cups of water. Mix well.

Close the pressure cooker and cook on high flame for 3-4 whistles or until the dal and vegetables are cooked.

Once the pressure cooker cools down, open the lid and check the consistency of the Santula. If it is too thick, add more water and adjust the seasoning.

Garnish with coriander leaves and serve hot with steamed rice.
