The taste of sago barfi is delicious. They are generally used during fasting, but food lovers prefer them on other days too. It is also considered good for health. Also, very less ingredients are used in it, due to which it can be prepared anytime.
Ingredients
Sabudana – 1 cup
Milk – 3 cups
Sugar – 3/4 cup
Ghee - 1/4 cup
Almond pieces – 1 tablespoon
Cashews – 1 tablespoon chopped
Recipe
- First of all, clean the cup of sago by placing it on a damp cloth.
- Take a pan add sago in it and keep stirring continuously for 10 minutes on low medium flame.
Fry the sago until it changes color slightly. If it becomes crunchy, remove it and let it cool.
Grind one pound of sago in a mixer and take it out in a bowl.
- Heat 3 cups of whipped cream milk in a pan on high flame. Boil until slightly thickened.
Boil the milk for 20 minutes and keep stirring so that the milk does not stick. When the milk thickens, add sugar to it.
- Keep stirring it continuously and now when the sugar melts, turn off the gas. Keep it aside.
- Heat 1/4 cup ghee in a pan. When it gets hot, add sago powder to it.
Fry it on low flame. There will be a smell of sago. Add one tablespoon of chopped almonds and 1 tablespoon of cashews.
When it starts changing color, slow down the flame and add boiling milk to it.
Now keep stirring this mixture until ghee is released.
- Mix 5-6 pieces of cardamom powder in it. It is better to be prepared to make barfi.
- Grease the plate with ghee and take out this mixture to apply it on that plate.
- Mix the pistachios evenly with the help of a spoon. Add pistachios on top and keep it in the freezer for 2 hours.
- After the time is over, apply the mixture thoroughly. Again cut it into desired shapes with the help of a fork. Sabudana barfi is ready.
