01) Tiranga Dhokla

  • Rice 1/2 cup
  • Washed Urad Dal 2 1/2 tbsp
  • sour curd 3/4 cup
  • Besan sifted 1 cup
  • Turmeric powder 1/4 tsp
  • oil 2 tbsp
  • Lemon juice 2 tbsp
  • Soda bicarbonate 1/4 tsp
  • salt to taste
  • Bunch of fresh coriander leaves 2 medium
  • Bunch of fresh mint leaves 1 medium
  • Green chilies 4-6
  • sugar 1 tsp
  • Nuts 1/4 cup
  • Mustard seeds 1 tsp
  • Chopped fresh coriander 2 tbsp
  • Coconut 1/2 cup

Process

1. Coarsely grind rice and urad dal for white dhokla. Take the powder in a bowl and add two tablespoons of curd and a three-fourth cup of warm water to it.

2. Mix well to make a batter of pouring consistency. Keep in mind that no lump should be formed. Set aside for fermentation for eight to ten hours.

3. For Khaman Dhokla, take gram flour and turmeric powder in a bowl. Add the remaining curd and about three-fourths cups of hot water and mix well so that there are no lumps. Keep it to ferment for three to four hours.

4. Heat water in a pan. Put a ring in it. Take the fermented white dhokla batter and mix it well by adding ½ tablespoon oil, ½ tablespoon lemon juice, and ¼ teaspoon baking soda. Add salt and mix.

5. Heat water in a steamer. Grease a plate and pour the white dhokla batter till it is half full. Place it on the ring in the pan.

6. Place it in a steamer, cover it, and cook in steam for five minutes, make a smooth paste by grinding together coriander leaves, mint leaves, green chilies, and one tablespoon of lemon juice, salt, sugar, and lumps.

7. In a small bowl, mix the remaining lemon juice, 1/2 tablespoon oil, and turmeric powder. Add the remaining soda bicarbonate and mix.

8. Pour this into the Khaman batter and mix. Remove the white dhokla from the steamer and spread a thick layer of green chutney over it.

9. Pour the khaman batter over the chutney layer and steam again for ten to twelve minutes or until cooked. If the skewer inserted in the dhokla comes out clean, then the dhokla is ready.

10. For tempering, heat the remaining oil in a pan and add mustard seeds. When the seeds crackle, pour the tempering over the Tiranga Dhokla.

11. Cut it into square pieces and serve garnished with coriander leaves and grated coconut.

02) Tricolor Raita

  • Thick curd 1 1/2 cups chilled
  • carrot 1 medium
  • Potato boiled and peeled 1 medium
  • Cucumber peeled 1 small
  • green onions 1
  • salt to taste
  • pinch of red chili powder
  • black pepper powder 2 pinches
  • Spinach leaves, blanched and chopped 1 medium bunch
  • Milk chilled 1/4 cup

Process:

1. Chop the carrots roughly and put them in a chopper. Cut potatoes into small cubes. Cut the cucumber into small cubes. Chop the green onions. Keep aside some carrots, potato, and spinach for garnishing.

2. Combine spring onions and potatoes in a bowl. Put the carrot in the second bowl and the cucumber in the third bowl. Add salt to all three bowls.

3. Add red chili powder to carrots and black pepper powder to cucumbers and potatoes. Add spinach to the cucumber and mix.

4. Whisk the curd, add milk and whisk till smooth. Add an equal quantity of curd in all three bowls and mix well.

5. Garnish carrot raita with reserved carrot, potato raita with reserved potato, and spinach raita with reserved spinach.

6. Cool and serve.

03) Tricolor Sandwich

Ingredients:

  • 4 bread slices, edges removed
  • ½ cup grated cabbage
  • ½ cup grated carrots
  • 1 cup mayonnaise
  • 2 tbsp schezwan sauce
  • 2 tbsp mint chutney
  • salt to taste
  • 2 tbsp butter

Process

1. In a mixing bowl, add grated cabbage, carrot, mayonnaise, and salt.

2. Pour the mixture into three different bowls.

3. Add schezwan sauce in one and mint chutney in the other and mix well.

4. Keep the third mixing bowl plain. Take pieces of bread, and apply butter on each piece.

5. Add mint chutney mixture to it. spread evenly.

6. Place another bread slice on top of it. Apply butter from side to top.

7. Spread the plain mixture on this bread slice. spread evenly.

8. Place another bread slice over it and spread the schezwan mixture over it.

9. Cover with bread slices. Gently cut into 2 pieces and serve
