Semolina Kheer, also known as Rava Payasam, is a delicious Indian sweet dish made with semolina, milk, and sugar and flavored with cardamom that can be easily made at home. Today we have brought you the recipe to make it at home.

Ingredients:

1/2 cup semolina

4 cups milk

1/2 cup sugar

1/4 tsp cardamom powder

2 tbsp ghee

2 tbsp chopped nuts (cashews, almonds, pistachios, etc)

1 tbsp raisins (optional)

a pinch of saffron threads

Chopped pistachios for garnish (optional)

Recipe:

Heat ghee in a thick-bottomed pan or a deep pan on medium heat.

Put semolina in the pan and roast it till it turns golden brown and fragrant. Keep stirring continuously to avoid burning. This step is important as it gives rich flavor to the kheer.

After the semolina is roasted, add chopped nuts and raisins to the pan and fry for a minute till the nuts turn light golden in color.

Add milk slowly while stirring continuously so that no lumps are formed.

Add saffron threads and cardamom powder to the milk and mix well.

Lower the flame and let the kheer simmer for about 10-12 minutes, stirring occasionally so that the kheer does not stick to the bottom.

Add sugar to the kheer and mix well. Boil for another 5 minutes till the sugar dissolves completely and the kheer becomes thick and creamy.

Switch off the flame and let the kheer cool slightly. It will thicken further on cooling.

Garnish the semolina kheer with chopped pistachios.

Serve the kheer hot or cold as per your choice.
