Instructions :
- Blanch the spinach leaves by boiling them in hot water for 2-3 minutes. Strain the water and immediately put the boiled spinach leaves in a bowl of ice water. This helps to retain the bright green color. When it cools down, drain the water and grind the spinach leaves to make a smooth puree. Keep aside.
- Heat oil or ghee in a pan on medium heat. Add cumin seeds and let them splutter.
- Add finely chopped onions and fry till golden brown.
- Add ginger-garlic paste and chopped green chilies. Fry for a minute till the raw smell disappears.
- Add coriander powder, cumin powder, turmeric powder, red chili powder, and salt. Mix well.
- Add the spinach puree to the pan and mix well with the spices. Let it boil on low flame for 5 minutes.
- Add shredded paneer to the spinach mixture and mix gently. Cook for another 2-3 minutes till the paneer is heated through.
- If desired, add fresh cream to the dish and mix well.
- Garnish with fresh coriander leaves.
- Serve Palak Paneer with hot rice, naan, or roti.
