6-7 long, chopped green chillies
10-15 curry leaves
1 teaspoon mustard
seeds 1 cup chopped fresh coriander
2 teaspoons lemon juice
1 teaspoon baking soda
1 teaspoon turmeric powder
1 teaspoon sugar
2 tbsp oil
Salt as per taste
Recipe:
First of all, take a big bowl and sift gram flour in it.
Add curd to gram flour and mix well.
Now add turmeric powder, 1 teaspoon of oil, lemon juice, and salt to the gram flour mixture.
Prepare a smooth paste by adding water little by little, cover, and keep aside for half an hour.
Grease a thali or plate and keep it aside.
After the stipulated time, keep water in a vessel to heat. Add baking soda to the gram flour solution and stir.
Now take the vessel for making Dhokla and apply oil inside it with the help of a brush. This will prevent the gram flour batter from sticking to the pan.
Add baking soda to the gram flour paste and mix quickly. You will see that the batter has become foamy.
Immediately pour the batter into a greased plate or plate and place it in the vessel on top of the stand.
Cover the vessel with a lid and steam the dhokla for about 15-20 minutes or until a toothpick inserted in it comes out clean.
When the dhokla is cooked, take it out from the vessel and let it cool.
For tempering, heat the remaining oil in a small pan and add mustard seeds. Let them splutter.
Add curry leaves and green chilies to the tempering. Fry for a minute or two.
Pour this tadka over the dhokla, making sure it is spread evenly.
Garnish with chopped coriander leaves.
Let it cool for a few minutes and then cut the dhokla into square or diamond-shaped pieces.
Your delicious Gujarati Khaman Dhokla is ready to serve. Enjoy it with green chutney or tamarind chutney.
