We all know that garlic adds a unique flavor to dishes and is also beneficial for health. Garlic chutney takes the taste to a whole new level. There is a different pleasure in eating garlic chutney and today we have brought a recipe to make Rajasthani garlic chutney at home. Let us know.

Material:

20-25 cloves of garlic

2-3 tomatoes

1 inch piece of ginger

8-10 dry red chillies

2 tsp coriander seeds 1 tsp carom seeds

1 tsp fennel

1 tsp cumin

2 pinch asafoetida

2 tbsp desi ghee

Salt as per taste

Recipe:

First of all, peel the garlic cloves and keep them aside in a bowl.

Combine coriander seeds, carom seeds, fennel seeds, and 4-5 dry red chilies in a grinder. Add peeled garlic cloves to this mixture and grind them to make a thick paste. If needed, you can also add 1-2 teaspoons of water.

Cut the tomatoes into pieces and add them to the blender along with the remaining dry red chilies. Blend until a smooth paste is formed.

Heat desi ghee in a pan.

When the ghee is hot, add cumin and asafoetida to it. Fry for a few seconds until they start crackling.

Add the ground masala paste and salt to the pan. Cook it on medium flame while stirring continuously. Cook until the ghee separates from the spice paste.

Add tomato and chili paste to the pan and mix well.

Keep cooking while stirring occasionally until the garlic chutney is cooked well and the ghee separates from it. It should turn into a thick, aromatic chutney.

Turn off the flame and let the chutney cool.

Your Rajasthani-style garlic chutney is ready to serve. You can store it in the refrigerator for a few days.
