Gujarati Dhokla is a popular snack from the Indian state of Gujarat. Everyone likes this very much. Today we have brought its recipe for you.
Ingredients:
For Dhokla batter:
1 cup gram flour
1/2 cup curd
1/2 cup water
1 tbsp lemon juice
1 tsp ginger-green chili paste
1/2 tsp turmeric powder
Salt as per taste
1 tsp Eno fruit salt
For tempering:
2 tbsp oil
1 tsp mustard seeds
1 tsp cumin seeds
a pinch of asafoetida
8-10 curry leaves
2 green chilies, sliced
2 tbsp chopped coriander leaves
2 tbsp grated coconut
2 tbsp lemon juice
Instruction:
- In a mixing bowl, add gram flour, curd, water, lemon juice, ginger-green chili paste, turmeric powder, and salt. Mix well to make a smooth batter without any lumps.
- Keep the batter fermenting for 15-20 minutes.
- Meanwhile, prepare a steamer by filling water in a large vessel and placing a steaming plate or dhokla tray over it.
- Grease the steaming plate or dhokla tray with oil to prevent sticking.
- Just before steaming, add eno fruit salt to the batter and mix gently. The batter will become frothy.
- Pour the batter into a greased steaming plate or dhokla tray.
- Place the plate or tray in the steamer and cover with a lid.
- Steam the dhokla on a medium flame for about 15-20 minutes or till a toothpick inserted in the center comes out clean.
- After the Dhokla comes to a boil, take it out of the steamer and let it cool for a few minutes.
- Cut the dhokla into square or diamond-shaped pieces.
- For the tempering, heat the oil in a small pan. Add mustard seeds and let them splutter. Then add cumin, asafoetida, curry leaves, and green chilies. Fry for a minute.
- Pour the tempering over the dhokla, making sure it is evenly distributed.
- Garnish with chopped coriander leaves and grated coconut.
- Sprinkle lemon juice over the dhokla.
- Let the dhoklas soak in the tempering and flavors for a few minutes.
- Serve Gujarati Dhokla as a breakfast or snack. It is traditionally served with green chutney or tamarind chutney.
