Sattu Paratha is a popular and delicious Indian Paratha that is made with sattu stuffed paratha. It is a specialty of the state of Bihar in India but is also enjoyed in other parts of the country. Learn here the easy recipe for making Sattu Paratha:

Ingredients:

For the dough:

2 cups whole wheat flour

water (as needed)

salt to taste)

For the stuffing:

1 cup sattu

1 onion, finely chopped

2 green chilies, finely chopped

2 tbsp fresh coriander, chopped

1 tsp ginger-garlic paste

1 tsp roasted cumin powder

1/2 tsp red chili powder

1/2 tsp garam masala (optional)

salt as per taste

ghee or oil (for cooking)

Instruction:

In a mixing bowl, mix the whole wheat flour, salt, and water gradually to make a soft dough. Knead the dough well until it becomes smooth and elastic. Cover it with a damp cloth and keep it aside for about 15-20 minutes.

In another bowl, mix all the stuffing ingredients, sattu, chopped onions, green chilies, coriander leaves, ginger-garlic paste, roasted cumin powder, red chili powder, garam masala, and salt. Mix well to make a crumbly mixture.

Make small balls of equal size from the dough. Take one ball and roll it into a small circle on a floured surface.

Place a spoonful of sattu stuffing in the center of the rolled dough ball. Bring the edges of the dough together and seal it tightly to enclose the filling.

Flatten the filled dough slightly and dust it with flour. Roll it gently into a paratha of desired thickness.

Heat a griddle or griddle on medium heat. Place the rolled paratha on the hot tawa and cook for a minute or two till bubbles start appearing on the surface.

Flip the parantha and apply some ghee or oil on the cooked side. Cook for a minute or two, applying ghee or oil on the other side as well, till it turns golden brown and crisp from both sides.

Repeat the process with the remaining dough balls and stuffing mixture to make parathas.

Serve hot and crispy Sattu Parathas with curd, pickle, or any side dish of your choice.
