PC: Madhura's Recipe
Appe, also known as paniyaram or paddu, is a popular South Indian dish that is loved by all. Appe is usually crispy on the outside and soft on the inside. Here is the recipe for making appe:
Ingredients:
1 cup rice
1/4 cup urad dal
1/4 cup poha
1/2 teaspoon fenugreek seeds
Salt as per taste

Optional Ingredients for Variations:
Finely chopped onions, grated carrots, chopped green chilies, grated ginger, chopped coriander leaves, or any vegetable of your choice.
Instruction:
Wash rice, dal, poha, and fenugreek seeds together and soak them in water for about 4-5 hours.
After soaking, drain the water and transfer the mixture to a blender or wet grinder.
Make a smooth batter by adding water as required. Consistency should be similar to dosa batter.
Take out the batter in a large bowl and add salt. Mix well, cover the bowl, and let it ferment for about 8-10 hours or overnight. The fermentation process helps in making the appe light and fluffy.
After fermentation, stir the batter well. If the batter is too thick, add little water to adjust the consistency.
Heat an appe pan on medium heat and pour a few drops of oil on each mold.
Spoon batter into each pan mold, filling them about 3/4 full. If desired, you can add finely chopped onions, grated carrots, green chilies, ginger, cilantro, or any other vegetables of your choice to each mold.
Cover the pan with a lid and let the appe cook on a medium flame for a few minutes till the bottom side turns golden brown and crisp.
Using a spoon, gently flip each appe and cook till the other side also turns golden brown.
Once both sides are cooked and crispy, remove the appe from the pan and transfer them to a plate.
Repeat the process with the remaining batter, greasing the pan before pouring each batch of batter.
Serve hot crispy appe with coconut chutney, tomato chutney, or any chutney of your choice.
