When there is no vegetable other than potatoes in the house, you can try Rajasthani Dahi Aloo Ki Sabzi. Which you can serve with roti, rice, or puri-parathas.
Material :
Curd - 2 cups, Red chili powder - 2 tsp, Turmeric powder - 1/2 tsp, Roasted cumin powder - 1 tsp, Coriander powder - 1 tsp, Salt - as per taste, Oil - 2-3 tbsp, Potato - 3-4 boiled and chopped, cumin - 1 tsp, mustard seeds - 1/2 tsp, black pepper - 3-4, cloves - 3-4, onion - 2 chopped, green chili and ginger-garlic paste - 1-1 tsp, Curry leaves- 4-5, Garam masala- 1 tsp, Kasoori fenugreek- 1 tsp, Red and green chilies- 2-3 chopped, Green coriander- a little.
Method :
Mix curd, red chili powder, turmeric powder, salt, cumin powder, and coriander powder well in a bowl.
Heat oil in a pan and fry potatoes till they turn golden brown on low flame. In the same pan, temper with cumin, mustard seeds, black pepper, and cloves.
Add onions and green chilies and fry till they turn pink. Simultaneously fry ginger-garlic paste and curry leaves.
Now it is the turn to mix curd solution in it, which has to be cooked till it boils. Then add fried potatoes and a little water to it. It has to be cooked for five to seven minutes.
Lastly, add garam masala, kasoori methi, red-green chilies, and green coriander. Curd potatoes are ready.
