Ingredients for making Rabdi
Milk - 2 liters
Almonds – 10-12
Pistachios – 10-12
Cardamom powder - 1/2 tsp
Saffron - 1 pinch
sugar - as per taste
How to make rabdi
To make Tasty Rabdi, first, put full-fat milk in a heavy-bottomed wide pan and keep it on medium flame to heat. After some time, when the milk becomes hot and starts boiling, slow down the flame of the gas and keep stirring the milk in between with the help of a ladle. When a layer of cream appears on the milk, apply it on one side of the pan with the help of a ladle.
Similarly, as many times as cream appears on the upper surface of the milk, apply it on the edge of the pan with the help of a ladle. During this, cook the milk till it remains one-third. After this add sugar as per taste to the milk and mix it well. After this, mix cardamom powder, almond shavings, pistachio shavings, and saffron threads in the milk.
After this, scrape out the frozen cream on the sides of the pan with a ladle and add it to the milk and mix it. This will increase the taste of Rabri a lot. After this cooks the rabri for 2-3 more minutes and then turn off the gas. After this, let the rabdi cool down at normal temperature. When the rabdi cools down, keep it in the fridge for 2 hours. After this, put the rabdi in a serving bowl and garnish it with almonds and serve.
