Ingredients:
4 pav buns
2 cups Pav Bhaji (leftover or freshly made)
1 onion, finely chopped
1 tomato, finely chopped
2 tablespoons butter
1 teaspoon pav bhaji masala
1/2 teaspoon red chili powder (optional, adjust to taste)
Salt to taste
Fresh coriander leaves, chopped
Butter for toasting the buns
Instructions:
Heat a pan or tawa over medium heat and add butter to it.
Once the butter melts, add the finely chopped onion and sauté until translucent.
Add the finely chopped tomato and cook until they become soft and mushy.
Add the pav bhaji masala, red chili powder (if using), and salt. Mix well and cook for a minute.
Add the Pav Bhaji to the pan and mix it with the onion-tomato mixture. Cook for a few minutes until well combined and heated through.
Meanwhile, slice the pav buns horizontally, but not all the way through, so that they can be opened like a sandwich.
Apply butter on the inner sides of the buns.
Heat a griddle or a pan over medium heat. Place the pav buns on the griddle with the buttered side down and toast until they turn golden brown and slightly crispy.
Once the buns are toasted, remove them from the griddle and spread a generous amount of the Pav Bhaji mixture on the inner sides of the buns.
Garnish with freshly chopped coriander leaves.
Serve the Pav Bhaji sandwich hot with some extra Pav Bhaji on the side, if desired.
