Pav Bhaji Sandwich is a delicious and flavorful twist on the traditional sandwich. It combines the popular Indian street food, Pav Bhaji, with the convenience of a sandwich. Here's a recipe for you to enjoy:

Ingredients: For the Bhaji (Spiced Vegetable Mash):

2 tablespoons oil

1 large onion, finely chopped

1 green bell pepper (capsicum), finely chopped

1 cup mixed vegetables (e.g., carrots, peas, cauliflower), finely chopped

2 large tomatoes, finely chopped

4-5 cloves of garlic, minced

1-inch piece of ginger, grated

2 tablespoons Pav Bhaji masala

1 teaspoon red chili powder (adjust to taste)

Salt to taste

2 tablespoons butter

Fresh coriander leaves for garnish

For the Sandwich:

8 slices of bread

Butter for spreading

Pav Bhaji masala for sprinkling

Grated cheese (optional)

Instructions:

Heat oil in a large pan or skillet over medium heat.

Add chopped onions and sauté until they turn translucent.

Add minced garlic and grated ginger. Sauté for another minute.

Add the chopped bell pepper and mixed vegetables. Cook for 3-4 minutes until they soften.

Add chopped tomatoes, Pav Bhaji masala, red chili powder, and salt. Mix well.

Cover the pan and cook on low heat for about 15-20 minutes, stirring occasionally until the vegetables are completely cooked and mashed.

Once the vegetables are well-cooked, mash them with a potato masher or the back of a spoon to achieve a chunky consistency.

Add butter and mix it into the mashed vegetables. Cook for an additional 2-3 minutes.

Sprinkle fresh coriander leaves on top and set aside.

Heat a griddle or a sandwich maker.

Take two slices of bread and spread butter on one side of each slice.

Spread a generous amount of the prepared Pav Bhaji mixture on one buttered side of each slice.

If desired, sprinkle some grated cheese on top of the bhaji mixture.

Close the sandwich by placing the buttered sides together.

Place the sandwich on the heated griddle or sandwich maker and cook until it turns golden brown and crispy on both sides.

Remove from the heat and cut the sandwich into halves or quarters.

Serve the Pav Bhaji Sandwich hot with tomato ketchup or green chutney.
