Pumpkin Pudding

Ingredients: Ghee 4 tsp, Pumpkin 200 g, Whole Milk 1 cup, Cardamom Powder 1 tsp, Condensed Milk 300 g, Grated Coconut 1/2 cup, Roasted Cashews, Roasted Almonds and Pistachios

Recipe

Heat 3 to 4 spoons of ghee in a wide vessel and after that add 200 grams of pumpkin. Now fry it in ghee for about 5 minutes. After this add 1 cup of whole milk and cook it in milk till this pumpkin becomes thick. After this, add 1 teaspoon cardamom powder, 300 grams of condensed milk, and 1/2 cup freshly grated coconut to it. Keep the flame of your gas medium and keep stirring it till it becomes thick. Now mix cashew nuts and almonds. After this, you add two spoons of more ghee and cook till the ghee gets mixed in the pumpkin. Your halwa is ready.

Pumpkin Raita

Ingredients: Pumpkin (grated or chopped) 1 cup, curd 1 cup, milk 1/4 cup, chopped coriander, and green chilies, salt to taste, red chili powder, roasted cumin powder, mint to taste, black salt (a pinch) and sugar (1/2 tsp).

Recipe

Heat some water in a pan and add grated pumpkin and cook for about 5 minutes. Then filter all the water and keep it aside. After this, put the curd in the mixing bowl along with the pumpkin. After that add milk to it and mix well. Now add salt, black salt, cumin powder, mint powder, red chili powder, and sugar and mix well. with that, pumpkin raita is ready
