The festival of Narak Chaturdashi is celebrated on the second day of the 5-day long Deepotsav. This festival is also called Chhoti Diwali or Roop Chaudas in many places. On this day, people clean the dirt of their bodies along with their houses.

Ingredients to make Mix Pakoras
Gram flour – 1 cup
Rice flour – 2 tbsp (for crispiness)
Onion – 1 finely chopped
Potato – 1 medium finely sliced
Cabbage – 1 cup chopped into small pieces
Capsicum – ½ cup, finely chopped
Spinach – ½ cup finely chopped
Green chilies – 2-3 finely chopped
Ginger – 1 tsp finely chopped
Coriander leaves – 2 tbsp finely chopped
Red chili powder – 1 tsp
Turmeric powder – ¼ tsp
Celery – ½ tsp
Salt – as per taste
Oil – for frying
Method to make Mix Pakoras
To prepare Mix Pakoras, first of all, add gram flour, rice flour, red chili powder, turmeric powder, celery, and salt in a large mixing bowl. Now prepare a thick batter by adding water little by little so that the vegetables get well coated in the batter. Do not make the batter too thin, otherwise the pakoras will not become crispy.
After this, add chopped onion, potato, cabbage, capsicum, spinach, green chilies, ginger, and coriander leaves to the batter and mix well. Coat the vegetables well in the batter. After this, heat the oil in a pan on medium flame.
After the oil is heated, take the mixture little by little with the help of a spoon or hand and put it in the oil. Fry the pakoras on medium flame till they become golden and crispy. When the pakoras become golden brown, take them out and place them on a paper towel so that the excess oil drains out.

Now serve them with green chutney or tomato ketchup. You can add vegetables of your choice to this recipe such as brinjal, carrot, or cabbage. You can sprinkle some chaat masala on the pakoras to enhance their taste.
