Mishti Doi is a traditional sweet yoghurt dessert from Bengali cuisine, it's made by boiling milk, sweetening it with jaggery or sugar, and fermenting it overnight. Here's a recipe to make Mishti Doi:
Ingredients:
- 1 litre of full-fat milk
- 1/2 cup jaggery or sugar
- 1/4 cup plain yoghurt
- A pinch of cardamom powder
- Saffron strands for garnishing (optional)
Instructions:

Pour the milk into a heavy-bottomed pan and bring it to a boil over medium heat. Stir occasionally to prevent the milk from sticking to the bottom of the pan.

Once the milk comes to a boil, reduce the heat to low and let it simmer for 30-40 minutes until it reduces to half its original quantity.

Add jaggery or sugar and cardamom powder to the milk and stir well until it dissolves completely.

Allow the milk to cool down to a lukewarm temperature.

Add a few tablespoons of plain yoghurt to the lukewarm milk and mix well.

Transfer the mixture to earthenware pots or any small clay pot. Alternatively, you can use any container with a tight lid.

Keep the pots in a warm place overnight to ferment. It usually takes around 8-10 hours for the yoghurt to set.

Once the yoghurt is set, refrigerate it for a few hours before serving.

Garnish with saffron strands (if using) and serve chilled.
