Ingredients for making Dosa
3 cups parboiled rice
1 cup washed urad dal
1/2 tsp fenugreek seeds
2 tsp salt
oil for cooking dosa

Ingredients for making masala
800 grams of boiled potatoes cut into pieces
2 cups chopped onions
4 green chillies finely chopped
4 tbsp oil
1 tsp mustard seeds
15 to 20 curry leaves
2 tsp salt
1/4 tsp turmeric powder
1/2 cup water

Recipe
- First of all, wash the rice and soak it in a vessel.

- Soak lentils and fenugreek seeds in another vessel for 5 to 6 hours or overnight. - After this grind the pulses smoothly. Prepare a batter by grinding rice.

- Add salt and water to it and thin the batter a little. Keep it like this overnight to ferment or let it become a little spongy depending on the weather.

- If the batter seems thick, add some more water. Now heat the pan and apply oil to it with the help of a brush.

When it becomes completely hot, sprinkle some water on it and immediately pour the batter on it and spread it, making it circular.

- Do it very fast. After spreading the dosa on the pan, slow down the flame and add some oil on the edges so that the dosa gets cooked properly.

On the other hand, heat the pan and add mustard seeds, onion, curry leaves, and green chilies and fry on high flame until the onion becomes transparent.

- Now add salt and turmeric to it and mix well.

- Add potatoes to it. Mix the potatoes well add some water to it and cook for 2 to 3 minutes.

- When the edges start turning light brown, remove the dosa with a thin ladle.

- Place the stuffing in the middle of the dosa and fold it. Serve it with chutney and sambar.
