Here's a recipe for Malai Broccoli, a special and flavorful snack:

Ingredients:

1 large head of broccoli, cut into florets

1 cup heavy cream

1/2 cup grated cheese (cheddar or mozzarella)

2 tablespoons ghee or butter

1 teaspoon ginger-garlic paste

1 teaspoon cumin powder

1/2 teaspoon turmeric powder

1/2 teaspoon red chili powder (adjust to taste)

1/2 teaspoon garam masala

Salt to taste

Fresh coriander leaves for garnish

Instructions:

Preheat your oven to 200°C (400°F). Grease a baking dish or line it with parchment paper.

Bring a pot of water to a boil and blanch the broccoli florets for 2-3 minutes until slightly tender. Drain and set aside.

In a separate pan, heat ghee or butter over medium heat.

Add the ginger-garlic paste and sauté for a minute until fragrant.

Reduce the heat to low and add the cumin powder, turmeric powder, red chili powder, garam masala, and salt. Mix well and cook for a minute to allow the spices to bloom.

Slowly pour in the heavy cream, stirring continuously to combine with the spices. Cook for a few minutes until the cream thickens slightly.

Add the grated cheese to the cream mixture and stir until it melts and blends in.

Add the blanched broccoli florets to the creamy sauce and gently toss until they are well-coated.

Transfer the broccoli mixture to the greased baking dish and spread it evenly.

Place the dish in the preheated oven and bake for about 15-20 minutes or until the top is golden and bubbly.

Once baked, remove from the oven and let it cool for a few minutes.

Garnish with fresh coriander leaves and serve the Malai Broccoli hot as a special snack.
