Lemon butter cookies are a delightful treat for snacks. They have a tangy and buttery flavor that is sure to satisfy your taste buds. Here's a recipe for making lemon butter cookies:

Ingredients:

1 cup unsalted butter, softened

1 cup granulated sugar

2 tablespoons freshly grated lemon zest

2 tablespoons freshly squeezed lemon juice

2 large eggs

3 cups all-purpose flour

1/2 teaspoon baking powder

1/4 teaspoon salt

Powdered sugar for dusting (optional)

Instructions:

In a mixing bowl, cream together the softened butter, granulated sugar, lemon zest, and lemon juice until light and fluffy.

Add the eggs, one at a time, mixing well after each addition.

In a separate bowl, whisk together the flour, baking powder, and salt.

Gradually add the dry ingredients to the butter mixture, mixing until just combined. Do not overmix.

Divide the dough into two portions and shape each portion into a log, approximately 2 inches in diameter.

Wrap the logs in plastic wrap and refrigerate for at least 1-2 hours until firm.

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Remove the chilled dough logs from the refrigerator and slice them into rounds, about 1/4-inch thick.

Place the cookie rounds on the prepared baking sheet, spacing them about 1 inch apart.

Bake the cookies for 10-12 minutes or until the edges turn golden brown.

Allow the cookies to cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely.

Once the cookies have cooled, you can dust them with powdered sugar if desired.
