Ingredients for making Kaju Katli

Cashews – 1 cup (200 grams)

Sugar – 1/2 cup (100 grams)

Water – 1/4 cup

Method

Making Kaju Katli is quite easy. To prepare it, first you have to prepare cashew powder. To make cashew powder, first dry it well. After drying, grind the cashews finely. Do not grind it completely, otherwise it will leave oil.

Now keeping it aside, put 1/2 cup sugar and 1/4 cup water in a pan and mix on low flame till the sugar dissolves. When the sugar dissolves completely, cook it a little more so that it becomes a string syrup. After the syrup is ready, add the cashew mixture to it.

Keep in mind that you have to stir it continuously, otherwise it will start burning. Cook it till it starts separating from the sides of the pan. When the right paste is ready, turn off the gas and let it cool down a bit. When it cools down enough to touch, knead it lightly with your hands.

Now apply ghee on a tray with a smooth surface and spread the mixture. After spreading it well, cut it into diamond shapes. Finally you can apply silver work on it. So your Kaju Katli is ready. Enjoy it in the festive season.
